Grey my good man you do sound decidedly jaded by your experiences.
I too know that feeling all too well...

They BDS26 aren't as involved as a 3LN carby, remove jet's and clean, remove top cap and slide/needle etc and check for wear. remove emulsion tube , clean and check for wear etc
Remove mixture screw, spring, washer and seal and blow the port out well, check the hole at the bottom of the thread's is open to the main bore of the carby.
Poke some fishing line through any hole's to check for dried fuel, gum/varnish etc
Check all hole's at the bottom of the thread's where the jet's screw into are open and you can feel air come out when blowing the carby out
    Do all hole's/port's,

Had a look through some older posts of someone with the same bike looking for float heights and it just confused me haha :/
just need to know which way to sit them and what height to set me at

if you keep the needle valves and floats together with their respective carbs it should be a case of checking what you have first, then checking the fuel level -> then adjusting the float height if necessary

resist the temptation to fix something when it's not broken you may end up going round in circles
