Yea bud they are new main jets new o rings and seals i stripped down the whole thing and I have started the bike and it running but I cant get it to start with out throttle
And the revs are all over the place example; it will fire with throttle, then you will have to hold the throttle for a few minutes till the revs pick up, then the revs will jump to 6000rpm, ill let got of the throttle and twist the idle screw out till it drops down to 2000 -1500rpm about 30 seconds after this it will die...
(This is what happened yesterday when i had 20min to play with it)

It sounds like you have taken steps backwards, if the revs are all over the place you have probably got a vacuum leak now. The rubber boots probably have a tear in them or something.

The carb boots were fine before I put them on...
Im going to cry if its a vaccum leak
They haven't been synced with a set of vaccum gauges just a rough bench syncing

Ps my 18mth old son managed to put a vics bottle down my exhaust, i didnt know about until it shot out and hit the garage door

Yeah I remember thinking my boots where fine too until I took an arrow to the knee. The boots are a fickle fickle son of a b****. Depending whether they are OEM or not plays a big factor because basically if they are Chinese I found that tightening the clamps to 100% tightness will slice a hole in them. The OEM ones (rare for L/N model here in aus) you can fully tighten.

At this stage if your idle was fine and it reved up to a certain point just fine 100% of the time but now the revs are all over the place and wont idle properly you have done a boo boo. I would order a new carb seal kit from @maelstrom and bend the boots inspecting closely for holes or tears. Apart from the boots it is possible you may have over tightened the pilot screws when setting them which can damage the seals and there is a tone of other seals worth replacing also.

On the same token it could be something stupid like you forgot to turn the fuel back on at the petrol tank =).
Its hard to diagnose these problems without being there having all the info etc.
