Okay, so I cleaned out all of the passages I could with brake cleaner, the starter(?) jet was actually pretty clogged it seems, and I checked the float levels giving it a slight adjustment... then the same thing happened when I put it on the bike, a whole lotta nothing. Are there any weird vacuum lines I'm missing or something? I really feel like this thing should be running right now.

I meant the whole carb units, not just the diaphragms.

Nope, that's why I asked you to post a pic of your bike and carbs. Those carbs in the eBay link are for a MC15 engine. The carbs on the VT250F (MC08 engines) were only available on the VT250F and VT250F2. I've never seen what the VF500F carbs are like, but you might try them.

You'll still find entire carbs and parts...

This link has both carbs available...

How did you go with the starter spray?

Couldn't try it as I don't have any and no money till Friday, if it's still not going by then, then I may give it a go.
Found I had set the float level incorrectly as the manual's instructions are kind of unclear, I had been trying to set it by the arm level and not the float puck thing level, have done that now and gave everything a once over.
I went ahead and blew some air into the carb too to make sure the slide works fine and indeed it does rise, but I was thinking I might try to prop it open for a first run or something, saying as it seems to be trying for air over fuel or spark.
VF500 carbs look pretty much identical to mine, just multiplied.. might take a look at those if my units are truly done for.

Alright providing a nice update here.
The bike ran today after I changed the gas full of additives out for some fresh ethanol free 91, then I doused the intake in starting fluid.
It only runs with throttle and the choke appears to do nothing at all, so I believe I may have messed up the idle settings when I stupidly removed the spring during my first diassembly, I also believe I am installing the choke wrong or the rubber has seized to the nut, as it appears to twist the whole assembly during installation and I believe that's what could be causing my problems.
If anyone knows much about the choke installation on these, I'd love to hear about it.

I am pleased to say the bike was running well.. for about 2 minutes, then a strange ticking sound came from the gearbox area so I quickly shut it off, and to my horror the starter no longer appears to work. Anyone know what that sound might have been? I'm hoping I just need to replace the starter but if the whole gearbox just disintegrated then It'd be nice to know.
